Chef José Carles loves to experiment. If you´ve been to his restaurant, Donde José, you´ll be part of the journey he takes every week to explore flavors using Panamanian ingredients and different influences. But now, he is opening Lo Que Hay, a fonda style restaurant for those who crave old fashion, but really good, comfort food.
