Sabor Local coming soon to La Manzana , Santa Ana

Sabor Local is a concept that joins under the same roof fondas and restaurants, supporting small and mid-size businesses.  They prioritize consuming local produce, and you´ll find in their gastronomic hubs from comfort food to more gourmet options.

Starting in 2021, Sabor Local will open in La Manzana at Santa Ana.  They´ll activate the whole groundfloor with their gastronomic experience, including kiosks and an internal open air plaza for outdoor seating.

Here, Miguel Cuberas talks about the project, coming to La Manzana, and if you´d like to participate… how they work!

 

Sabor Local: tell us about the concept and how was it born

SABOR LOCAL is born from the need of spaces dedicated to the celebration of gastronomy and emtrepreneurship in an organized, curated way. Inspired by some of the most important foodhalls in the world, but rescuing Panama´s essence found in the local municipal markets.

 

 

Something we love about you is that you work with everyone: fondas and established restaurants. What attracted you to La Manzana?

We deeply believe in projects where spaces are rescued or where new platforms are created for social and economic development, and especially in La Manzana where every wall and floor has so many stories to tell, as many as SANTA ANA itself as a neighborhood.

 

  

 

Tell us a bit about how are these kiosks going to work at La Manzana.  What restaurants are already coming, and what would you like to have?

 The kiosks are gastronomic stations; they are ready to operate (no furniture or equipment).  We do like interviewing candidates, at Sabor Local we curate so the concepts can complement each other and add value to the space beyond a simple “selling nice food”.

We are looking for “express” concepts or small versions of already established brands. Also new entrepreneurs that would like to be more formal.

Right now we have restaurants like Juan Tong (Chinese/Panamanian), Big Pollo (Grilled Chicken), Noble Burger (Cheeseburgers).

Can you tell us about pricing and how can people get in touch with you?

Rent is a percentage base of sales, with a minimum that range around $1250 or a 15% of the gross sales, whatever is higher.  There is also a maintenance fee that is being set right now, but usually is around $500 to $750. This should get defined once the operational side starts.  Each tenant has to get their own utility contracts.

The rents will vary depending on the space we have destined for more formal cafes or mini restaurants.
