As a curious fact, in 1873, the brother´s company Shuber began the construction and finished works in 1874, baptizing the building as the Grand Hotel Central, now known as Central Hotel Panama. In 1878, the hotel was destroyed by a fire that started by a detonation in the pharmacy located in one of the local commercials inside the hotel. The hotel was rebuilt and opened again in 1884. Yesterday, they inaugurated an exhibition about one of the best known Panamanian musicians of the early Republic:  Narciso Garay. Born in 1876 (died in 1953) he was the son of a poet and a painter. Almost inevitably, he becomes a violinist. After his studies in Brussels and Paris he returns to Panama. Fresh and spicy, they were the creation of Waldo, the owner of the recently opened “Ceviche” restaurant at Casco Viejo.  Waldo has lived in Singapure, and its ceviche does show some Asian influence!
